Baking a little? Get started with 5 lbs. of our best Hard Red Winter wheat berries. Baking more? We offer several size options up to 45 pounds. Hard Red Winter wheat is the backbone wheat of cooking and baking. These berries are versatile and can be used with good results in just about any recipe. While there are a variety of different flour blends for sale, Hard Red Winter is the foundation wheat for many of those blends. It’s higher protein content and greater gluten strength allows for a more robust dough with greater elasticity. This translates into a bigger, fuller rise for a loaf of bread. We regularly use this wheat to make flour for baking pizza crust, rolls, loaves and other yeast bread recipes. If we run out of Soft White Wheat flour for quickbread recipes, we can substitute with this wheat and have good results. That’s the versatility of our Hard Red Winter wheat. Standard protein for Hard Red Winter wheat is 11.5%, these berries measure in at 11.8% protein. For some bread recipes we do suggest adding 1 tablespoon of vital gluten to further enhance the dough and achieve a greater rise. The compounds that make these berries red also confers to them a hearty, nutty flavor and a natural earthy color to baked products. As their name suggests, these berries are harder than those of soft varieties, which can require a slightly longer grind time to get fine flour when compared to our Soft White Wheat. The “Winter” name comes from the fact that this wheat is planted in the fall and over-winters before growing to maturity in the following spring/summer.
